I want to know what everyones favorite 'easy' recipe is... I was never taught to cook so we eat a lot of boxed crap around here and I want to learn to be a better cook... So, what's your favorite recipies? Breakfast, lunch, dinner, snack, whatever.. Lay it on me!

Here's one for a zucchini slice!
5 eggs 1 Cup Self Raising Flour 1 large Zucchini, Grated 1 large Onion, finely chopped 1 Cup grated cheddar cheese 7oz Rindless Bacon, diced 1/4 Cup Vegetable Oil Preheat oven to 340 degrees F. Grease and line a 12 x 8 inch tray (make sure tray is about 1 inch deep, minimum Beat eggs in a large bowl until combined. Add Flour and mix until smooth, Add onion, bacon zucchini, cheese and oil and stir to combine. Pour mixture into prepared tray and bake for about 30 minutes, or until cooked through This can be eaten warm or cold, with salad or vegies or by itself as a snack. |

Italian Sausage Rigatoni
(I make it with Hungarian Sausage sometimes too, a little spicier!) Ingredients 1 pkg. (19.76oz) Italian Sausage, grilled and coin-sliced. 1 pkg. Rigatoni pasta 3 tbsp. olive oil 2 cloves garlic, minced (I buy it in the little pre-minced shaker) 1 large red pepper, chunked and sauteed 1 jar (26 oz.) of your favorite pasta sauce (we use a little more, and it's either Prego or Hunts garlic flavor) 3 tbsp. parsley, chopped (again, I use the pre-chopped shaker) Directions Cook sausage according to package directions, keep warm. Cook the rigatoni according to directions, keep warm. In a large pan place olive oil and garlic, saute lightly for 30 seconds (or a little longer, not to exceed 1 minute). Add peppers and cook until crisp-tender. Combine cooked sausage and pasta sauce with peppers and heat until warm. Mix with the pasta, or serve separately. Top with parsley (if desired) and serve warm. The nice thing about this recipe is that you can add things to it (which makes it a GREAT beginners recipe.) I usually sprinkle mozzarella cheese on the top, and some Parmesan. :) I'll go yank my recipe book out, there's another one my family really likes, called Yum-A-Setta. Basically hamburger, velveeta, meat and tomato sauce. You cook it in the oven, and it lasts a really long time. |

This one is pretty easy, cheap and yummy..
We use turkey kielbasa (1-2 depending on how many people you're feeding) Sliced onions Red Potatoes (quartered) Fresh parsley leaves A little bit of olive oil & pepper. Sweet red peppers. Cut 'em all up and put them in a pain. Mix the olive oil around really well, and then cover it and bake it until the potatoes are done. Add a few tsp of heavy cream for sauce.. makes it super yummy. |

Yum-A-Setta
Ingredients 1 pound of hamburger 4 cups of egg noodles Brown Sugar (1/4 cup, or more to taste) 1/2 pound Velveeta cheese 1 onion (if desired) 2 cans of Campbell's tomato soup (or more, depending on the consistency of the sauce you want) Directions 1. Brown the meat and onion (if you want onion) in a skillet, drain all grease. 2. Add tomato soup (just what's in the can, do not add any water), and stir it all together. 3. Add brown sugar. 4. Boil noodles. 5. In a large casserole dish, layer noodles, meat sauce and place a layer of Velveeta cheese. 6. Repeat until the dish is full. (I usually get two layers, and have some left over.) Make sure to end with cheese being on the top. 7. Cover with aluminum foil, and bake at 350 degrees, for 30 minutes. Like I said, this one lasts for awhile. When we're done eating, we just cover the leftovers in the casserole dish and shove it in the fridge. We re-cook it in the oven (or microwave it) when we re-eat it. I don't recommend cooking it in the oven more than twice, or it tastes like crap. Microwaving portions is just fine though :) |

And one more, because I'm a recipe junkie!
Catalina Chicken This one is SUPER easy. Takes two minutes. Ingredients 2 Chicken breasts (thawed out, not frozen) 1/2 pkg. dry lipton onion soup mix 6 ounces of Catalina Salad Dressing Directions 1. Put chicken in a casserole dish (I use a cake pan, honestly) which has been sprayed with Pam (I always forget the pam, it's fine). 2. Sprinkle with 1/2 package dry onion soup mix. 3. Pour 6 ounces of Catalina salad dressing over chicken. 4. Cover and bake at 350 degrees for 45 to 50 minutes. This is good with rice, or chicken flavored noodles, any boxed thing really ;) I usually double it, and use four chicken breasts and a whole thing of the soup mix. Because well, there's more than two of us ;) I don't measure the ounces of dressing either, I just pour until everything is covered and then add a bit more for good measure. |

oh, oh, oh.
Then there's just spaghetti. Noodles + Pasta sauce, and I make home-made cornbread. The Jiffy mix! Just mix the cornbread together, pour into cupcake cups and bake it in the oven for whatever time it says ;D Or meat + instant potatoes (some people don't like them, I do!) and I totally go buy KFC gravy because I SUCK at making gravy. Usually I make mock chicken legs or pork chops with it. I'm trying to think of what other easy stuff I have... Mac and Cheese? The home-made kind. Macaroni noodles, and velveeta. A lot better (I think) than the boxed stuff. I go cheese nuts on it. |

It's good with pretty much anything! Rice, chicken, mashed potatoes... any thing carb-y. ;D |

Stir Fry!
Just get your favorite vegetables (I like broccoli, snap peas, baby corn and bamboo shoots) and sautee that with some chicken breast in your favorite sauce. I serve it over a cup of brown rice! Healthy and DELICIOUS. I also love a good baked chicken breast with some Mrs. Dash seasoning. It's so easy, you just pop it in the oven and let it cook! I usually eat it with a serving of vegetables and a serving of brown rice. Another easy peasy recipe is chili. Just take a can of red kidney beans (or dried beans as a healthier option) and a jar of salsa. Also add in some spices for 'heat' if you like your chili hot. Or you can use packet seasoning, but it's usually loaded with sodium. Cook that over medium heat until it boils, then turn the heat down and simmer 20 minutes covered. I like to add in a pound of ground turkey sometimes and I serve it over brown rice. :D |

I know you do Emily! Here is another one of my favorite recipes.
Oven Roasted Chicken Drumsticks (I am making this today, but with chicken breasts) Ingredients: 10 chicken drumsticks, 2 tbsp paprika, 2 tbsp garlic powder, 2 tbsp onion powder, 4tbsp cooking wine (sherry), 2 cups low sodium chicken broth Heat oven to 375. Remove skin from chicken drumsticks in 9x13 pyrex dish combine chicken broth and cooking sherry. in separate bowl mix seasonings. Coat the drumsticks with seasoning and place in the pyrex dish. cook for 30 minutes, basting occasionally. After 30 minutes turn drumsticks over and continue baking and basting for an additional 15 - 30 minutes or until chicken reaches internal temperature of 180 degrees. Makes 10 servings at 100 calories each. |

Oh I got it off the Old El Paso website! It calls for one of their 'dinner kits' but all you need is corn enchiladas, spice mix and tomato sauce if you can't get one of their kits. You can leave out the sour cream and cheese if you want to make it lower fat, it doesn't affect the flavour much. And we use olive oil, not corn oil. As a diabetic, I have to watch my sugar and carb intake, but I love cookies....so thankfully I came upon this recipe. I'll post a link to the original recipe, but I've done it a couple times so of course I have my own habits with it.
Low Carb Peanut Butter Chocolate Chip Cookies! 3/4 cup peanut butter 3/4 cup Splenda granular 1/4 cup egg substitute or 1 large egg 1 teaspoon vanilla extract 1/2 cup sugar-free chocolate chips -Preheat oven to 350f -beat the heck out of the splenda and the egg. Like, seriously. beat the heck out of it. Then add the vanilla. -Melt the peanut butter a little bit in the microwave or on the stovetop, just to make it a bit easier to incorporate, then add that to the splenda/egg/vanilla and mix until fully incorporated. -Add in the chocolate chips. I prefer godiva sugar free chocolate above the others, so I will usually get a sugar free dark chocolate bar (60%) and crush it up until it's about the size of chocolate chips. The recipe online says hershey's, but for me the aftertaste is kind of weird. -Throw 'em onto a cookie sheet (parchment or spray, whatever you like. They brown better on the bottom if you just use a baking spray, or if you have a butter/flour mix you enjoy) and pop 'em in the oven for about 10-12 minutes. Hey, I was going through my saved recipes and I found a pretty good low carb higher protein recipe. I think you should try it out!
Low Carb Higher Protein Taco Bake Crust 4 ounces fat free cream cheese, softened 3 egg whites 1/3 cup Fat free half and half 1/2 teaspoon taco seasoning 8 ounces low fat cheddar cheese, shredded Topping 1 lb ground turkey, 93% lean 3 teaspoons taco seasoning 1/4 cup tomato sauce 4 ounces chopped green chilies 8 ounces cheddar cheese, shredded -For the crust, beat the cream cheese and eggs until smooth. Then add the cream and seasoning. -Grease a 9"x13" baking dish; spread the cheese over the bottom. -Pour in the egg mixture as evenly as possible and bake at 375º, 25-30 minutes. - Let stand 5 minutes before adding the topping. At this time reduce the heat of the oven to 350º -For the topping, brown the turkey; drain fat (there won't be much). -Stir in the seasoning, tomato sauce and chiles. -Spread over the crust and top with cheese. -Bake another 20 minutes at 350º or until hot and bubbly. You can serve with the toppings of your choice but it will add additional carbs and calories! This makes 8 servings and is 160 calories per serving with 6g of fat and 3.7g of carbs and 22g of protein! The sodium can be a bit on the high side so to combat that I don't use packet taco seasoning. I usually use my own 'special blend' of seasonings for the amount of heat I like. I also don't used canned green chiles (as easy as it is) usually I'll just buy some fresh chiles from the produce deptartment. I usually get jalapenos. But that's just me, some people like super easy peasy recipes so the packet taco seasoning and the canned chiles make it a bit easier! |
