remember how i had this big plan to make turkey pot pie with all of the leftovers after christmas? then i was really sick and didn't cook anything, so i just chopped the turkey up and froze it for use at a time when i'd stopped feeling like death? well, that time came. today.
i'd never made pot pie before, and i have to say that it turned out really well. the taste was fantastic, even if the presentation wasn't. aka it sort of fell apart, which i blame on not having a pie-lifter, thus having to make due with a lifter/spatula that was entirely the wrong size. that aspect aside, it was a raging success. and i doubled the recipe, which gave us a pie for dinner tonight and one to freeze for later. on top of that there was filling left, so i've frozen it as well, and will bake it in individual ramekins with phyllo topping/crust, just for something different.
