500 Calorie Challenge.
So, I am starting a 500 Calorie Challenge that I learned about through a youtube video. Now, when reading the title, I assumed it had something to do with food and I said to myself: "Noo! This girl is starving herself!" Haha. But actually, it's buring calories with working out. Its a five day challenge and basically you burn five hundred calories in five days. Simple enough. If it works out to my advantage when I step on the scale in about a week, I might update it to a longer status like a month. I'm also in a three month challenge where i pledged to lose thirty pounds. Ten lbs a month isnt bad and totally doable.
Last night, I made this amazing soup which has more of the consistency of a stew really. Here's the recepe if anyone is interested.
Kerri's Amazing Mexican Veggie Soup
1/2 of a red onion
2 ripe tomatoes
1/2 small size of mild salsa (or hot, depending on your taste)
1 medium can of black beans (pinto would probably work too)
1. Chop up the onions and tomatoes to about an inch thick pieces
2. In a pot, spray the area with cooking spray and saute the onions on medium heat until they are tender looking and pliable. Add the tomatoes and continue to cook on same heat, stiring until the tomatos look mooshy. You can also add the second tomato in later so that there are chunks of tomato to the soup.
3. Add salsa and stir in.
4. DO NOT drain the black beans. Even if it says to. The juice will thin out the soup. Add in beans.
5. Add a couple of dashes of Mexican Paprika and Ground Cumin. Salt and pepper to taste.
6. Continue to simmer in between medium and low heat for about five minutes or until its all hot.
7. Serve.
Delish! haha The best part, everything (minus the salsa) is fresh. And everything is good for you. Its also a very versatile soup. If you wanted to add chicken or some sort of meat, thats perfectly fine, and it's also great for vegetarians.
Theres this great website that I discovered thats called Exercisetv.tv which provides hundreds of workout videos for free. They even have an iTouch/iPhone app for it. haha. I did the dance one, and felt ridiculous because I'm as white as an albino so me popping my booty felt really... unnatural to say the least. LOL. But once I got into it, it was actually really fun.
I havent decided if I'm going to go to the Zumba class tonight or just go for a walk. The walk is free and I already did sort of the same workout vid as today but the workout will keep me accountable for pace and time.
