A quiet day.
I hung wet laundry out to dry,
laughed about nothing on the phone with my best friend
who is visiting in four days from overseas,
made cookies and pasta,
sat quietly with my husband and watched
some game show.
I have a few hours before bed--
I should probably make them meaningful,
but I might just watch reality tv show
and scrape back my cuticles with overgrown fingernails instead.
burst tomato pasta
serves two very hungry people
2.5 cups penne
2 punnets cherry tomatoes
6 cloves garlic, minced
2 tsp olive oil
1 teaspoon rosemary
1 teaspoon thyme
1 teaspoon oregano
60g soft goat cheese (chevre)
zest of one lemon
salt and pepper to taste
heat olive oil and garlic until garlic is fragrant in a thick-bottomed pot. add in tomatoes, salt and pepper. meanwhile, combine softened goat cheese and lemon zest in a separate container. boil pasta. when tomatoes begin to burst, smash them with the back of a spoon to create a sauce. add in herbs to sauce. drain pasta, toss pasta in goat cheese mixture to coat. serve with sauce and fresh basil, if desired.
